Michael Symon's Playing with Fire

Michael Symon's Playing with Fire

Clarkson Potter. 2018

Cohost of The Chew and celebrated Iron Chef and restaurateur Michael Symon returns to a favorite subject, meat, with his first cookbook focused on barbecue and live-fire grilling, with 150 recipes inspired by his newest restaurant, Mabel's BBQ, in his hometown of Cleveland. In preparing to open his barbecue restaurant, Mabel's BBQ, Michael Symon enthusiastically sampled smoked meat from across America. The 150 finger-licking, lip-smacking recipes here draw inspiration from his favorites, including dry ribs from Memphis, wet ribs from Nashville, brisket from Texas, pork steak from St. Louis, and burnt ends from Kansas City--to name just a few--as well as the unique and now signature Cleveland-style barbecue he developed to showcase the flavors of his hometown. Michael offers expert...

Grill It Up

Grill It Up

Gibbs Smith. 2018

Smoke it, brine it, mop it, or grill it! But do it low and slow. Pulled pork, brisket, ribs, chicken, corn on the cob—everyone has a barbecued favorite. And with so many different cooking styles, creating an endless amount of grilled possibilities is easy when you have great recipes for dry rubs and “special” sauces to make ordinary meats and vegetables, extraordinary. Drizzle some Alabama White Sauce over a juicy sirloin steak or season it with Steve’s Famous Dry Rub to serve along with some Garlic Baked Potatoes and Grilled Asparagus, followed by S’more Chocolate Chip Cookies for dessert. Not feeling that hungry? Grill up a Tuna Melt or some Mix ‘n Match Veggie Kebabs. When you Grill It Up you’ll soon discover that grills weren’t made for just steaks, burgers, and hot dogs. Steve...

  1. I couldn’t get my smoker to smoke worth a crap, and this item solved that issue in my propane smoker. I also switched from the wood chips to the chunk and using this smoker box, get a great smoke flow for a good 2 hours. Just what I was looking for. Used a few times and no warping of box at all. Very pleased with item and seller and would recommend to a friend. Thanks!

  2. My new Weber Genesis gas grill was just delivered this morning from Lowe’s and I’ve been itching to try it out. After a burn off and seasoning the grates and cook chamber with bacon, it was time to get down to my first cooking. Nothing special, just a few pre-formed burger patties. To add a little outdoor flavor, I also decided to try out my new Cave Tools smoker box. I used a handful of dry apple chips that filled the smoker box less than halfway. Cranked up the grill, put the smoker box in the front left corner on top of the Flavorizer bars and sat back to wait for the smoke to appear. It didn’t take long to see the first wisps of smoke rising. I dropped the seasoned and still frozen burger patties on the grates, closed the lid and began the odyssey.I’m here to report the burgers were delicious. The grill worked perfectly (as expected) and the Cave Tools smoker box was impressive. The chips started smoking pretty quickly and never caught fire. That’s really all that’s you can ask for from a simple tool like this–it works! I’ve used a couple of those cast iron boxes before and I was less impressed. If the chips didn’t burn up immediately they usually didn’t smolder either. And the cast iron boxes always turned red and crusty with rust in short order. I’ve also used foil pouches that failed miserably to ever produce even a tiny wisp of smoke. I pretty much had given up ever getting a wood smoke flavor from a gas grill until now. Finally, since other reviewers have questioned the honesty of the positive reviews posted here, I would further like to report that I have not in any way been compensated for this review. Nobody paid me or even offered indirect encouragement. I was not provided with any free merchandise. No compensation whatsoever. None. Not a damn penny. Not that I can’t be bought, it’s just that no one is apparently interested. :-)Give this thing a try and see for yourself.

  3. I love my new CAVE TOOLS Smoker Box! Smokes the competition of other boxes I’ve owned that bit the dust with rust or wouldn’t smoke after buying them. This one rocks! It’s solid, durable, hasn’t rusted at all and I love it! Now I look forward to making smoked “this and that” on the grill. Before I dreaded it with my old smoker box. No more soaking wood chips before cooking (what a pain and the darn wood chips never seemed to smoke no matter what soaking I did). Add wood chips to this box and fire up the grill! It’s that easy! This box smoked 15 minutes into the heating of the grill, and I love it! Smokes EVERY TIME !!! I’ve waited so long for a REAL SMOKER BOX like this! Thanks Cave Tools, I’ll be recommending this to everyone I know with a grill !!!!! Don’t buy some store brand smoker box (ya’ll know which one I mean I’m sure!) with those holes in the bottom, they’re junk! Buy a REAL BOX, this one from Cave Tools and I promise you will be thrilled from the start!

  4. I love that I was able to use this thermometer right out of the ox without even having to read a manual. I didn’t even care to change it from celsius to Fahrenheit as I was in a rush and since it has an alarm I just turned on the alarm, took a chicken drum and inserted the problem right next to the bone and threw it on the grill. The cable was sufficiently long for me to place the thermometer away from the heat in the table safely. Again I turned on the alarm, selected the option for chicken and faced it toward the living room. I then took a seat and started watching TV, about 20 minutes later I heard a beep and got up to check. The thermometer had reached the correct temperature for chicken.I decided to make sure and opened the drum to make sure no blood was present and it was cooked perfectly. I did insert it in the biggest drum I could find and made sure that heat was even for all meat pieces. this was the easiest thing I have ever done. I look forward to testing steak next. I will state that while it brings two probes only one can be used at a time as there is only one plug however it is good to have a spare.

  5. The Adoric Digital Food Thermometer has made my cookout easier and tastier! I cannot mess anything up when I use this device. My husband really likes it since he has dubbed himself the “GrillMaster”. He loves to grill and he loves his gadgets. There are 8 different meat settings and 5 different doneness levels. The probe is key to a perfectly cooked meal on the grill or even the oven! The backlit LCD screen is easy to read and the alarms are easily heard. There are timer settings as well. We really like how easy operation of the thermometer is and how our time can be used more wisely with the help of it. I don’t know why I didn’t get one of these sooner! I hope my review has been helpful to you. It encourages me to continue writing and updating my reviews. Please leave a comment if you have any questions, I will be more than happy to answer if I can be of help.

  6. This is so cool! I use this when we make chicken I don’t ever have to guess if the chicken is done. I can use this, it tells you the tempature very clear! No problems with packageing

  7. I love how this digital thermometer can be used for may different things while cooking. I’ve been using it while cooking meat and making hard tack candy. It’s very accurate, which is crucial in making candy.

  8. This Adoric Digital Thermometer has everything to work right out of the box with the batteries included as well. The design is very sleek and modern and is also very sturdy as well. The touchscreen has good brightness and the touch controls work very well and are responsive, and you can easily read the on-screen display with the LED light. The stainless steel probe is heat resistant and can be used for BBQ and oven-cooking which I mainly use it for. Additionally, you also get preset programmable temperatures which can be a great time saver and saving you the hassle of figuring out the right temperature to cook. I would highly recommend this product for anybody looking for a digital cooking thermometer to make your life easier.

  9. This worked awesome. Some digital gauges, you’re left with your hand in the heat source, waiting for a long time to get an accurate reading. With this, you push it in and have your reading with two or three seconds.
